INGREDIENTS
- 1 lb Pickled or Smoked Pork
- 1 lb Sprats or Small Jacks
- 1/2 lb Dasheen
- 1/2 lb Tannias
- 1/2 lb Green Bananas
- 2 Medium Christophenes
- 1 lb Cabbage
- 0.5 pt of Oil
Seasoning Ingredients:
- 2 Green Limes (juiced)
- 2 stems Chive
- 1 sprig Thyme
- 2 cloves Garlic
- 1 Onion (chopped)
- 1 Hot Pepper
- 3 Cloves
DIRECTIONS:
Soak meat to remove some of the salt. Clean fish and put in water, salt to taste, 1 clove crushed garlic and juice of 1 lime, sufficient water to cover the fish. Set aside. Now peel and wash the ground provisions and cut into serving portions. Peel and slice christophenes. Cut cabbage into four sections. Drain meat and boil until tender. Add vegetables and ground provisions to pot. When almost cooked, add seasoned fish and remaining seasoning, let simmer. Add oil and serve hot.
