Plantain Pie


INGREDIENTS:

  • 8 green Plantains
  • 3 tbsp Mayonnaise
  • 1/4 lb Cheese (grated)
  • 1 small evaporated Milk
  • 1 large Onion
  • 1 clove Garlic
  • 2 tsp chopped Parsley
  • 2 tsp chopped Celery

DIRECTIONS:


Peel and wash plantains, then cook until very soft. Drain water.

Mash cooked plantains in a mortar (or suitable container) until very smooth.

Place mashed plantains in a bowl, then add all seasonings.

Combine mayonnaise, grated cheese and milk.

Mix all ingredients together.

Place in a well greased large deep baking dish.

Top with bread crumbs and a few sprinkles of grated cheese. 

Bake for 15 minutes until golden brown.
